Sanuki Udon (讃岐うどん) traditionally from Kagawa Prefecture. It was named after “Sanuki”, the previous name of Kagawa Prefecture. Sanuki udon is characterized by its square shape and flat edges. It is popular because of its firm and rather chewy texture.
